A one of its kind salad by the Lebanese that uses pita bread along with unique vegetables like radish and spring onions to create a crunchy and crisp final product. Remember to toss the bread with the dressing only few minutes before you serve it or else the bread will soak the liquid and turn chewy.

Ingredients

1 pita bread (6”)
olive oil for brushing
3/4 cup cucumber cubes
3/4 cup tomato cubes (deseeded)
3/4 cup iceberg lettuce , torn into pieces
1/2 cup capsicum cubes
1/4 cup finely chopped parsley
1/4 cup finely chopped spring onion greens
1/4 cup chopped mint leaves (phudina)
1/4 cup thinly sliced spring onions whites

To Be Mixed Into A Dressing
2 tbsp olive oil
2 tbsp lemon juice
1 tbsp finely chopped garlic (lehsun)
salt and to taste

Method
  1. Place a pita bread on a clean, dry surface and brush it with olive oil on both the sides.
  2. Heat a non-stick tava (griddle) and cook on a medium flame for 2 to 3 minutes or till it turns crisp and golden brown spots appear on both the sides.
  3. Cut the toasted pita bread into 25 mm. ×25 mm. (1”×1”) cubes.
  4. Combine all the ingredients, along with the dressing in a deep bowl and toss well.
  5. Serve immediately.
