Broccoli, Cheese and Chilli Quesadillas recipe | Whole Wheat Veggie Quesadillas |  Indian style Cheesy Broccoli Chilli Wraps |

These Broccoli, Cheese, and Chilli Quesadillas, also known as Whole Wheat Veggie Quesadillas or Indian-style Cheesy Broccoli Chilli Wraps, offer a quick and flavorful meal or snack. They're a delightful twist on a classic Mexican dish, adapted with whole wheat tortillas for a healthier touch, making them appealing to a broad range of tastes.

The recipe centers around 8 whole wheat tortillas, which serve as the wholesome wrapper for the vibrant filling. The stuffing itself is a simple yet potent combination designed to deliver both flavor and nutritional value. It features 3/4 cup of chopped and blanched broccoli, providing a good source of vitamins and fiber, along with a pleasant tender-crisp texture.

To infuse the stuffing with a creamy richness and a kick of spice, 1/2 cup of grated mozzarella cheese is combined with the broccoli. The cheese melts beautifully when heated, binding the ingredients and adding a satisfying gooeyness. For that signature Indian-style zest, 2 tsp of finely chopped green chillies are added, allowing for adjustable heat based on preference. A simple touch of salt to taste ensures the seasoning is just right.

Assembling these quesadillas is wonderfully straightforward. The prepared stuffing is divided into 4 equal portions. A single whole wheat tortilla is placed on a flat surface, and one portion of the stuffing is spread evenly in its center. Another tortilla is then placed directly over the stuffing, and the edges are lightly pressed together to seal the filling inside. This creates a neat, layered package ready for cooking.

The cooking process is quick and simple. Each assembled quesadilla is placed on a hot non-stick tava (griddle) and cooked with little oil until both sides achieve a beautiful golden-brown color. This careful cooking ensures the cheese inside is perfectly melted and gooey, while the tortillas become warm and slightly crispy. The process is repeated for the remaining tortillas and stuffing, yielding a total of 4 delicious quesadillas.

Once cooked, each quesadilla is cut into convenient 50 mm (2-inch) square pieces and served hot. While these Whole Wheat Veggie Quesadillas are a healthier option due to the use of whole wheat and vegetables, it's important to note the disclaimer: they are a "treat" and should be enjoyed by diabetics only occasionally and in small quantities, as the cheese and certain ingredients might impact blood sugar. For weight loss, the whole wheat and vegetables offer fiber and nutrients, but portion control is key due to the cheese. For pregnancy, they provide fiber and some nutrients from the vegetables, but moderation is advised, and it's always best to consult with a healthcare provider for specific dietary recommendations.
