An exquisite preparation of potatoes stuffed with sharply flavoured jalapenos, tangy sun-dried tomatoes and aromatic basil, floated in a creamy white sauce, this creation will raise you from the cadre of a good cook to a gourmet chef in the eyes of your guests! Baking imparts the perfect texture and a fusion of flavours to the Stuffed Potatoes in White Sauce, which tastes and feels best when served immediately with crisp toasted breads.
- Heat the butter in a broad non-stick pan, add the potatoes and little salt and saute on a medium flame for 2 to 3 minutes or till they turn light brown in colour from all the sides.
- Core the potato vertically through the centre using a corer so that a hollow cavity is created for the stuffing. Refer to below image.
- Repeat step 2 with all the potatoes.
- Stuff each of the potato with the prepared stuffing, place them on a greased baking dish and top with the prepared white sauce evenly over it and bake in a pre-heated oven at 200ºc (400ºf) for 10 minutes.
- Serve immediately.
