You will love the Cheesy Corn and Onion Toast not just for its cheesy flavour but also the interesting blend of textures. Sautéed onions, green chillies and corn are held together by a white sauce like paste, which makes it easy to apply the topping on the toast and also imparts a rich flavour. Grated cheese adds to the richness of this toast, but the smart move here is the use of raw capsicum strips, which imparts a wonderful crispness and a sharp taste to the whole arrangement. Serve the toast immediately upon baking, to enjoy the luscious molten cheese.

For The Mixture
1 tsp butter
1/4 cup finely chopped onions
1 tsp finely chopped green chillies
1 tsp plain flour (maida)
1/2 cup milk
1/2 cup boiled sweet corn kernels (makai ke dane)
salt and to taste

4 tbsp grated processed cheese
16 capsicum strips

tomato ketchup

  1. Heat the butter in a broad non-stick pan, add the onions and green chillies and sauté on a medium flame for 1 minute.
  2. Add the plain flour and sauté on a medium flame for a few seconds.
  3. Add the milk, mix well and cook on a medium flame for 2 minutes, while stirring continuously.
  4. Add the corn, salt and pepper and mix well.
  5. Divide the mixture into 4 equal portions. Keep aside.

  1. Place a bread slice on a clean, dry surface and spread a portion of the mixture evenly over it.
  2. Sprinkle 1 tbsp of cheese evenly over it and finally place 4 capsicum strips over it.
  3. Repeat steps 1 and 2 to make more 3 toasts.
  4. Bake in a pre-heated oven at 200°c (400°f) for 5 minutes or till crisp.
  5. Serve immediately with tomato ketchup.

perfect for a party as a starter.. all my guest relished this cheesy corn and onion toast. It was finished within no time of serving, specially the kids enjoyed.. and i added more of cheese for them..

Corn kernels cooked in white sauce and then stuffed in a hot dog roll and then baked in a oven. Ideal for kids and my girls loved it.

Tarla Dalal    You can try doing it on a tava but make sure you cover it with a lid so that the cheese melts properly.
