Surprise, surprise! Now, you can make mouth-watering pizzas at home, even if you do not have a convection or microwave oven. All you need is a broad non-stick pan and a bit of tact.
This delicious Pizza in A Pan is colourful and attractive, with a range of lip-smacking toppings and seasonings ranging from colourful capsicums, crunchy baby corn and juicy zucchini, to a tangy pizza sauce, and of course loads of cheese.
The secret to making the perfect pizza in a pan, is to cook on a very slow flame as these pizzas tend to cook faster than in an oven and will get crisp soon.
If you cook it on a high flame, it will get burnt even before all the toppings are cooked. So, if you patiently cook it on a slow flame, the outcome will be absolutely delightful!

- Make criss cross on the base of the tomatoes and place them in boiling water for 2 to 3 minutes or till the skin begins to peel.
- Drain the tomatoes, cool completely, peel, deseed and roughly chop them and blend in a mixer to a smooth pulp. Keep aside.
- Heat the olive oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
- Add the onions, mix well and sauté on a medium flame for 1 to 2 minutes.
- Add the prepared tomato pulp, oregano, chilli flakes, tomato ketchup, chilli powder and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Add the sugar, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.
- Place a pizza base on a clean, dry surface, put ¼th of the pizza sauce and spread it evenly.
- Place a few capsicum, babycorn and zucchini evenly over it.
- Finally sprinkle, mixed herbs, chilli flakes and ¼ cup of cheese evenly over it.
- Heat a broad non-stick pan and add 2 tsp of ghee.
- Place the pizza in it and cover it with a lid and cook on a slow flame for approx. 4 to 5 minutes or till the base is crispy and the cheese has melted.
- Repeat steps 1 to 5 to make 3 more pizzas.
- Cut each pizza into 4 pieces and serve immediately.

For the Pizza Sauce, clean, wash and remove the eyes of the tomatoes. You do not want them in your pizza sauce.
Make a criss-cross on the base of each tomatoes using a sharp knife. Make sure you use tomatoes that are firm and red in colour.
Meanwhile, keep the water for boiling in a deep pan.
Place the tomatoes in boiling water for 2 to 3 minutes or till the skin begins to peel.
Drain the tomatoes using a strainer.
Cool slightly and peel, they will peel easily because of the criss cross that was made at the base of the tomatoes.
Cut them into 2 and deseed them using a sharp knife. Removing the seeds not only ensures a smooth puree, but also ensures that the sourness of the tomatoes reduces.
Roughly chop them.
Transfer to a blender.
Blend in a mixer till smooth. Use a big mixer jar and not the small one as when you will blend it will overflow. Keep aside.
In a broad non-stick pan, heat the olive oil. Olive oil is used in all Italian recipes as it taste really great. Add the garlic. You can also use the paste if you have it ready but finely chopped always gives a better taste and good mouthfeel.
Sauté on a medium flame for a few seconds.
Add the onions.
Sauté on a medium flame for 1 to 2 minutes.
Add the prepared tomato pulp.
Add the oregano. If you wish you can also add mixed herbs.
Add the chilli flakes.
Add the tomato ketchup. This gives a little colour and sweetness to the sauce.
Add the chilli powder and salt. Chilli powder is added to give more colour and spiceness.
Mix well and cook on a medium flame for 2 to 3 minutes stir it in between. Make sure you are careful of the spluttering that happens of the tomatoes.
Add the sugar and mix well.
Cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.
Place a pizza base on a clean, dry surface. Pizza bases are available readily in the market but if you wish to make the pizza base at home.
Put ¼th of the pizza sauce over it.
Spread it evenly using a spoon.
Place a few capsicum slices evenly over the pizza base using your hands.
Place the babycorn and zucchini evenly over it. Always spread the veggies evenly so that there is no uneven distribution.
Sprinkle little mixed herbs and chilli flakes over it. If you do not have mixed herbs dried oregano can also be used.
Sprinkle ¼ cup of cheese evenly over it. Grate the cheese little thickly using a grater. We have used processed mizza cheese but if you want you can use mozzarella as well.
Heat a broad non-stick pan and add 2 tsp of ghee allow it to melt. Ghee gives the crispiness, you can also use butter or olive oil if you wish to.
Place the pizza in the pan. This is an easier and more Indian way to make a pizza as not everyone in India owns an oven.
Cover it with a lid. Make sure the lid is of the right size of the pan, steel or glass lid can be used.
Cook pan pizza on a slow flame for approx. 4 to 5 minutes or till the base is crispy and the cheese has melted. Be very careful and keep checking the pizza base as it might start to burn.
Place the prepared pizza in a pan on a clean, dry surface.
Cut each pan pizza into 4 pieces using a pizza cutter or a sharp knife or a steel flat spatula.
Serve no oven pizza or pizza in a pan immediately with an Ice Cream float to make a complete meal.
