Fruity Corn Salad, Fruit, Corn and Cucumber in Mint Dressing

Rich in vitamin A, vitamin C and folic acid, this colourful salad is made with a well-chosen combination of fruits and vegetables!
Lemon juice and mint go hand-in-hand to create a tangy tasting dressing. Sweet corn contributes a mild sweetness that combines well with pineapple, lettuce and watermelon.
A perfect salad for summertime that goes well a glass of cool and refreshing Panha and some Low-Cal Potato Wafers .
- Combine the mint leaves, ginger, green chillies and lemon juice with 1 tbsp of water in a mixer and blend to a coarse paste.
- Transfer the mint paste into a bowl, add the honey and salt and mix well. Keep aside.
- Combine all the ingredients in a deep bowl, pour the mint dressing over it and toss well.
- Serve immediately.
