Carrots give an enticing sweetness while cheese makes it totally awesome. A dash of tomato ketchup imparts a universally-loved flavour to this Cheesy Onion Grilled Sandwich, making it appealing to everybody.

8 whole wheat bread slices
butter for spreading and brushing

For The Filling
1/2 cup grated processed cheese
1/2 cup finely chopped spring onions whites
1 tbsp butter
2 tsp finely chopped green chillies
1/2 cup finely chopped cabbage
1/2 cup grated carrot
1/2 cup finely chopped spring onion greens
2 tsp chilli sauce
1 tbsp tomato ketchup
salt to taste

    For the filling
  1. Heat the butter in a broad non-stick pan, add the spring onion whites and green chillies and sauté on a medium flame for 1 to 2 minutes.
  2. Add the cabbage, carrot and spring onion greens and sauté on a medium flame for 1 minute.
  3. Add the chilli sauce, tomato ketchup and salt, mix well and cook on a medium flame for 1 minute.
  4. Add the cheese, switch off the flame and mix well till the cheese melts.
  5. Allow it to cool slightly and divide the filling into 4 equal portions and keep aside.

  1. Place 2 whole wheat bread slices on a clean, dry surface and butter them lightly.
  2. Spread 1 portion of the prepared filling evenly on each bread slice.
  3. Butter 2 more bread slices and place them on the filling with the buttered side facing downwards.
  4. Brush some more butter on top of the bread and grill in a greased pre-heated sandwich griller for 5 to 7 minutes or till they turn crispy and brown from both the sides.
  5. Cut both the sandwiches diagonally into 2 equal pieces.
  6. Repeat steps 1 to 5 to make 2 more sandwiches.
  7. Serve immediately with tomato ketchup.

I tried this recipe but was bit skeptical since I had never tried cabbage in a sandwich. I made only 2 sandwiches one each for my husband and myself. It turned out awesome. My husband even asked for more. The only change I had to make to the recipe was use Habenera sauce since I did not have Tabasco but it turned out great.

I got lots of praise for this recipe, I used garlic-red chilli chutney instead of chilli sauce and it turned out great, all finished in a jiffy, really a good taste and full of vegetables... a great snack/ light dinner recipe...

This sandwich is soooo good...the combination of vegetables with cheese is outstanding...will surely make this often....
