Ingredients

8 whole wheat bread slices
8 tsp butter for spreading and brushing

For The Cheesy Onion Grilled Sandwich Filling
1/2 cup grated processed cheese
1/2 cup finely chopped spring onions whites
1 tbsp butter
2 tsp finely chopped green chillies
1/2 cup finely chopped cabbage
1/2 cup grated carrot
1/2 cup finely chopped spring onion greens
2 tsp red chilli sauce
1 tbsp tomato ketchup
salt to taste

For the cheesy onion grilled sandwich filling

    For the cheesy onion grilled sandwich filling
  1. Heat the butter in a broad non-stick pan, add the spring onion whites and green chillies and sauté on a medium flame for 1 to 2 minutes.
  2. Add the cabbage, carrot and spring onion greens and sauté on a medium flame for 1 minute.
  3. Add the chilli sauce, tomato ketchup and salt, mix well and cook on a medium flame for 1 minute.
  4. Add the cheese, switch off the flame and mix well till the cheese melts.
  5. Allow it to cool slightly and divide the filling into 4 equal portions and keep aside.

  1. To make to make cheesy onion grilled sandwich, place 2 whole wheat bread slices on a clean, dry surface and apply ½ tsp butter on each slice.
  2. Spread 1 portion of the prepared filling evenly on one bread slice.
  3. Place the other bread slice, buttered side down, over the filling.
  4. Brush ½ tsp butter on top of the bread and grill in a greased pre-heated sandwich griller for 5 to 7 minutes or till it turn crispy and brown from both the sides.
  5. Cut the cheesy onion grilled sandwich diagonally into 2 equal pieces.
  6. Repeat steps 1 to 5 to make 3 more cheesy onion grilled sandwiches.
  7. Serve the cheesy onion grilled sandwich immediately with tomato ketchup.

Filling of the Cheesy Onion Grilled Sandwich

  1. For the Cheesy Onion Grilled Sandwich, take a broad non-stick pan and add butter into it.

  13. Turn the flame off and mix well till the cheese melts.
  14. Let it cool slightly and divide the filling into 4 equal portions and keep aside.

How to proceed for the Sandwich

  1. On a clean and dry surface, keep 2 whole wheat bread slices. You can either buy the bread slices from the market or make Whole Wheat Bread at Home.
  2. Apply 1/2 tsp of butter onto each bread slice.
  3. Take 1 portion of the prepared filling and spread evenly on one bread slice.
  4. Place the other bread slice over the filling, buttered side facing downwards. 
  5. Apply another 1/2 tsp of butter on top of the bread for added flavor and to prevent the bread from sticking to the griller.
  6. Grease the lower have of your sandwich griller and pre-heat it. You can make 2 sandwiches at a time if you wish.
  7. Place the sandwich on the griller, buttered side facing upwards.
  8. Grill for 5 to 7 minutes or till it turns crusty and brown from both the sides.
  9. Remove from the griller and place the sandwich on a clean, dry surface.
  10. Cut the Cheesy onion grilled sandwich diagonally into 2 equal pieces. You can also cut them into 4 square pieces.
  11. Repeat the steps to make 3 more Cheesy onion grilled sandwiches.
  12. Serve immediately with tomato ketchup or any other dip of your choice.

I tried this recipe but was bit skeptical since I had never tried cabbage in a sandwich. I made only 2 sandwiches one each for my husband and myself. It turned out awesome. My husband even asked for more. The only change I had to make to the recipe was use Habenera sauce since I did not have Tabasco but it turned out great.

I got lots of praise for this recipe, I used garlic-red chilli chutney instead of chilli sauce and it turned out great, all finished in a jiffy, really a good taste and full of vegetables... a great snack/ light dinner recipe...
