Carrot and Coriander Soup

Sweet carrot and peppy coriander come together to make a sensational soup that is sure to sweep you off your feet!
This zero-oil soup totals a mere 28 calories, and is a wise choice for weight-watchers. On the other hand, this easy-to-make soup is loaded with vitamin A. Carrot and coriander fulfil up to half your daily vitamin A requirement. Indeed, what a tasty and smart way to start your meal! - Combine the carrot and 1½ cups of water in a pressure cooker, mix well and pressure cook for 2 whistles.
- Allow the steam to escape before opening the lid.
- Transfer the carrot along with the water into a deep bowl, add the coriander and blend using a hand blender to a coarse mixture.
- Transfer the carrot-coriander mixture into a deep non-stick pan, add ½ cup of water, salt and pepper, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Serve hot.
