Makes 4 servings

4 cups watermelon chunks , seeds removed
5 tbsp sugar
6 tbsp heavy cream
2 tbsp rose syrup

  1. Combine the watermelon and sugar and blend in a mixer till smooth.
  2. Whisk the cream and mix with watermelon.
  3. Transfer to the kulfi moulds.
  4. Add a stick to each mould and chill over night.
  5. Demould, pour rose syrup on top and serve immediately.

Seems to be a good recipe. But just was confused that wont the mixture get too watery while blending as the water melon leaves too much water. And if it happens, what can we do about it?
