Pineapple, Banana And Fig Flambe

Ingredients


10 firm bananas
1 medium sized pineapple
1/2 cup dried figs (anjeer) or 2 large fresh figs (anjeer)
2 tbsp butter
1/2 cup brown sugar
3 tbsp lemon juice
1/4 tsp cinnamon (dalchini) powder
1/4 tsp cardamom (elaichi) powder
2 tbsp chopped almonds
4 tbsp rum (optional)

Method
  1. Peel and thickly slice the bananas.
  2. Core and cut the pineapple into 25 mm. (1") chunks.
  3. Cut the dried figs into strips or peel and chop the fresh figs.
  4. Place the bananas in a shallow ovenproof dish and top with the pineapple and fig pieces.
  5. Melt the butter in a saucepan. Stir in the brown sugar, lemon juice, cardamom powder, cinnamon and heat until well mixed. Pour over the fruits.
  6. Cover lightly and cook in a hot oven at 200 degree C (400 degree F) for 20 to 25 minutes.
  7. Remove and sprinkle with almonds.
  8. Heat the rum, ignite and pour over the fruit. Serve immediately.

Tips
  1. Always heat the liquor lightly before setting it alight.
  2. Ice-cream is a good accompaniment to this dessert.
