For The Spinach Sauce
4 cups chopped spinach (palak) , washed and drained
3/4 cup red pumpkin (bhopla / kaddu) cubes

Other Ingredients
2 cups cooked whole wheat spaghetti
2 tsp olive oil
2 tsp finely chopped garlic (lehsun)
1/2 cup finely chopped spring onions (whites and greens)
1/2 cup sliced red capsicum
1 tsp sugar
2 tsp dry red chilli flakes (paprika)
2 tsp dried oregano
salt and freshly ground black pepper (kalimirch) to taste

For The Garnish
1/4 cup chopped walnuts (akhrot)

  1. Combine the spinach, red pumpkin and 1 cup of water in a deep non-stick pan, mix well and cook on a medium flame for 8 minutes or till the pumpkin is cooked, while stirring occasionally.
  2. Allow the mixture to cool completely and blend in a mixer till smooth. Keep aside.

  1. Heat the olive oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
  2. Add the spring onions and red capsicum and sauté on a medium flame for 1 minute.
  3. Add the spinach sauce, sugar, chilli flakes, oregano, salt and pepper, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  4. Add the whole wheat spaghetti, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally.
  5. Serve immediately garnished with walnuts.

Yummy, tasty and crunchy....that's all I can think of after making this recipe....You don feel guilty after having these noodles becoz of whole wheat noodles and loads and loads of spinach.....
