2 tbsp finely chopped green chillies
2 tbsp fresh cream

2 cups chopped mixed vegetables (french beans , carrots and green peas)
2 cups white sauce

For The Topping
1 tbsp grated mozzarella cheese
1 tbsp grated processed cheese

  1. For the spinach puree, we need a bunch of spinach. Choose spinach that has vibrant deep green leaves and stems with no signs of yellowing. The leaves should look fresh and tender, and not be wilted or bruised. Avoid those that have a slimy coating as this is an indication of decay.
  2. Remove the stems and discard them.
  3. Wash the leaves thoroughly under running water or in a bowl full of water. This will help in getting rid of the dirt residues on the leaves.
  4. Chop the spinach leaves. We need 3 cups chopped spinach (palak).
  5. Place the spinach in a microwave safe plate and microwave on high for 1 minute. Cool slightly.

Vegetable florentine.. creamy and saucy spinach and layered with creamy mixed vegetable which is cruchy and cooked perfectly.. and lastly topped with some more cheese. WOw.. this was a great for sunday brunch.. All thoroughly enjoyed..
