Sev Biranj recipe, Meethi Seviyan, Sweet Vermicelli, Sev ni Biranj
Sev Biranj, also known as Meethi Seviyan or Sweet Vermicelli, is a beloved Indian dessert that transforms simple ingredients into a rich and aromatic treat. This particular recipe, sometimes referred to as Sev ni Biranj in Gujarati households, highlights the beautiful balance of textures and flavors. It's a delightful preparation where ghee-roasted vermicelli is simmered in milk, then sweetened and infused with fragrant saffron and cardamom. The result is a dish that's both comforting and celebratory, perfect for any occasion.
The magic of Sev Biranj begins with the careful roasting of 1 cup of vermicelli (semiya) in 3 tablespoons of ghee. This step is crucial, as it imparts a wonderful nutty aroma and a beautiful golden-brown color to the vermicelli, laying the foundation for its unique mouthfeel. Simultaneously, a few saffron (kesar) strands are steeped in 1 teaspoon of warm milk, allowing the saffron to release its vibrant color and distinct floral notes, which will later permeate the entire dish.
Once the vermicelli achieves that perfect golden hue, the liquid elements are introduced. A combination of 1/4 cup milk and 1 cup of water is added, allowing the vermicelli to cook slowly and absorb the moisture, becoming soft yet retaining a slight chewiness. This patient simmering on a slow flame for about 5 minutes, with occasional stirring, ensures that each strand is perfectly hydrated and tender.
The final touches bring all the flavors together. 1/2 cup of sugar is added, providing the sweetness that defines this dessert. The fragrant saffron-milk mixture is stirred in, infusing the vermicelli with its signature hue and delicate aroma. A whisper of 1/4 teaspoon of cardamom (elaichi) powder elevates the entire dish, adding a warm, spicy undertone that is characteristic of Indian sweets. The mixture is then cooked on a medium flame for another 5 to 7 minutes, with gentle stirring, allowing the flavors to meld beautifully and the liquid to reduce to a delightful consistency.
Sev Biranj is celebrated not just for its rich and intense flavor profile, but also for its unique texture. The crisp yet soft texture of roasted and cooked vermicelli provides an interesting contrast that makes each spoonful a delight. The warmth of the ghee, the creaminess of the milk, and the exotic notes of saffron and cardamom all contribute to a truly immersive culinary experience.
This delectable dessert is best served fresh off the stove, while it’s still warm and inviting. A generous garnish of 2 tablespoons of pistachio slivers adds a touch of elegance and a subtle crunch. For an even richer presentation and added texture, you can also include raisins. Sev Biranj holds a special place in Indian culture, often gracing the tables during festive occasions like Holi, symbolizing joy and sweetness.
