Main Ingredients
1/2 cup soaked and boiled and crushed rajma (kidney bean)
2 tsp finely chopped garlic (lehsun)
1/2 cup finely chopped onion
1 cup finely chopped tomato
1/4 cup finely chopped capsicum
1/2 tsp chilli powder
1 tsp roasted cumin seeds (jeera) powder
1 tsp oil
salt to taste
Method
- Heat the oil in broad non-stick pan, add the garlic and sauté on a medium flame for few seconds.
- Add the onions and sauté on a medium flame for 1 minute.
- Add the tomatoes and 2 tbsp water and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Add the capsicum, rajma, chilli powder, cumin seeds powder, salt and 2 tbsp of water, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
- Use as required.

This is an extremely healthy version of Rajma and is used as a tasty base for filling tortillas with guacamole. Great to have for dinner and my source of protein. The capsicum in this recipe helps to lower the blood glucose level.

Refried beans are my favourite and taste great after adding capsicum to it....
