Microwave Panha: A Quick and Refreshing Summer Drink

Panha, the quintessential Indian summer drink, has been given a modern twist with this easy microwave panha recipe. Traditionally, this tangy and sweet cooler, made from raw mangoes, is a symbol of relief from the scorching heat. This microwave method simplifies the classic recipe, allowing you to prepare a fresh batch in a fraction of the time. The use of the microwave is particularly clever, as it quickly softens the raw mango cubes and dissolves the sugar efficiently, ensuring you can enjoy a cool, homemade panha whenever you please.

Preparing the Raw Mango and Saffron

The key to this delightful drink lies in the proper preparation of the mango and the aromatic additions. The first step involves a simple microwave process to soften the mangoes. You'll combine the raw mangoes with a small amount of water in a microwave-safe bowl and cook them on high for just two minutes. This quick burst of heat makes the mangoes tender and ready for the next step. At the same time, a small amount of saffron is soaked in water, which allows its vibrant color and subtle floral aroma to infuse into the drink later.

Cooking the Panha Pulp

Once the mangoes are soft, the sugar is added to the bowl. The mixture is then microwaved for another two minutes, a crucial step that ensures the sugar melts completely and blends seamlessly with the mangoes. This process creates a thick, flavorful pulp that serves as the base for the panha. After this, a touch of cardamom powder is added to infuse the pulp with a warm, spiced note. The mixture is then set aside to cool, which is essential before blending.

Blending and Final Assembly

After the pulp has completely cooled, it is transferred to a mixer and blended until it becomes a smooth, velvety consistency. This smooth pulp is the foundation of the drink. It is then transferred to a large bowl, and the prepared saffron-water mixture and black salt (sanchal) are added. The black salt is a key ingredient, as its unique tangy-salty flavor perfectly balances the sweetness of the mango and sugar.

Serving the Perfect Summer Cooler

With the panha concentrate ready, the final step is to mix it with plenty of chilled water. The recipe calls for four cups of chilled water to ensure the drink is perfectly diluted and refreshing. This easy and fast method means you no longer have to wait for a special occasion to enjoy this timeless cooler. Simply pour the freshly-prepared panha into glasses and serve it chilled, offering a delicious and invigorating way to beat the summer heat.
