For matar puri
 

  1. To make matar puri, blend 1 cup of fresh green peas with 3 tbsp of water to make fresh green peas paste.
  2. Combine all the ingredients in a deep bowl and knead into a semi-soft dough using ¼ cup of water.
  3. Divide the dough into 20 equal portions.
  4. Roll out a portion of the dough into a 100 mm. (4’) diameter circle without using any flour for rolling, on a greased rolling board and pin.
  5. Heat the oil in a deep non-stick pan and deep-fry a few puris at a time on a medium flame, till they turn golden in colour from all the sides. Drain on an absorbent paper.
  6. Serve matar puri immediately with pickle or raita of your choice.
