Rich, richer, richest are these creamy and soft Indian dahi kabab. Interestingly, hung curd forms the main ingredient of these kebabs, supplemented by paneer and bread crumbs for volume and shape. This trio is perked up with herbs, masalas and cashewnuts, not to forget the innovative addition of deep-fried onions, which gives an irresistible crunch and intense flavour to the kebabs.
This yogurt kebab is quite different from the lot, because it has a unique texture, which is not crisp, but soft and creamy with the mild crunch of onion in between. Remember to deep fry these kebabs on a medium flame and do not turn them too much, else they might break. Enjoy this hung curd dahi paneer cutlet immediately with green chutney.

Ingredients
For Dahi Ke Kebab
1/2 cup hung curds (chakka dahi)
1 1/4 cups grated paneer (cottage cheese)
1/2 cup fried onions
3 tbsp chopped cashew nut (kaju)
2 tbsp finely chopped coriander (dhania)
5 tbsp bread crumbs
1 tsp chilli powder
1 tsp garam masala
2 tsp finely chopped green chillies
a pinch of sugar
salt to taste
bread crumbs for rolling
oil for deep-frying
For Serving With Dahi Ke Kebab
Method
For dahi ke kebab
- To make dahi ke kebab, combine all the ingredients in a deep bowl and mix well.
- Divide the mixture into 8 equal portions and shape each portion into a 50 mm. (2”) diameter round kebab.
- Roll each kebab in bread crumbs so that the kebabs are evenly coated from both the sides.
- Heat the oil in a deep non-stick kadhai and deep-fry 2 kebabs at a time till they turn golden brown in colour from both the sides.
- Drain on an absorbent paper. Serve the dahi ke kebab immediately with green chutney.
Handy tip:
- At step 4, do not turn the kebab too frequently while deep-frying, else they will break.

Hi can I shallow fry instead of deep frying.

Thanks Rajshree. Shallow frying the kebabs will not give a crispy covering, and also if shallow fried, it will be difficult to turn over and cook as it is very delicate to handle. I would suggest you to deep fry these kebabs.

This is one of the best recipes. Very rich in taste. Can this be prepared and then heated in a microwave just before serving? Will the texture of the kebab be affected by doing this?

Hi, I am following a low carb diet. In this recipe, apart from the bread crumbs, everything is good for my diet. Could you suggest something else to use instead of bread crumbs which is low in carbohydrates? Regards, Anil

Hi Anil, You can avoid the bread crumbs and try cooking the kebab directly on a oil greased tava on a slow flame.
