Ingredients
Main Ingredients
3/4 cup coconut milk (nariyal ka doodh)
1/4 cup diagonally cut and blanched French beans
1/4 cup boiled green peas
1/4 cup sliced and boiled baby corn
1 tbsp red chilli paste
1/2 tsp cornflour
1 tbsp oil
1 tsp garlic (lehsun) paste
3 cups soaked and cooked long grain rice (Basmati chawal)
1 tbsp finely chopped basil
1/2 tsp lemon rind
salt to taste
Method
- Dissolve the cornflour in the coconut milk and keep aside.
- Heat the oil in a broad non-stick pan, add the garlic paste and red chilli paste and sauté on a medium flame for 1 minute.
- Add the coconut milk-cornflour mixture, french beans, green peas, baby corn, basil,lemon rind and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Add the rice, mix well and cook on a medium flame for another 2 minutes, while stirring occasionally.
- Serve hot.

Vegetable and coconut rice.. rice cooked with cocnut milk and vegetbles.. wow.. just taste so yumm.. not that difficult to make the recipe.. just too good..
