Banoffee Pie gets it name from the pleasing combination of bananas and toffee.


In this classic English dessert, a base of crushed biscuits and butter is topped with whipped cream, bananas and a special toffee prepared from condensed milk, and refrigerated till it sets.


In different variants, garnishes of coffee powder or chocolate may be used.


Although the preparation of toffee is a time-consuming process, here we have prepared it in a very simple, hassle-free manner that does not require you to stand by it.

Ingredients

For The Biscuit Base
1 cup coarsely crushed digestive biscuits
1/2 cup melted butter

For The Toffee
1 tin (400 gms) condensed milk
1 cup sliced bananas
1 cup beaten whipped cream

For The Garnish
2 tbsp grated chocolate
Method

  1. Combine the biscuits and melted butter in a bowl and mix well.
  2. Spread the mixture into a 7” loose bottomed cake tin and spread it evenly.
  3. Refrigerate for 15 to 20 minutes. Keep aside.

For the toffee

  1. Put the condensed milk tin in water in a deep pan and cook on a high flame for 1 hour. Keep aside to cool slightly.
  2. Once cooled open the tin and remove the toffee in a bowl and mix well. Keep aside.

How to proceed

  1. Place ½ cup of bananas on the prepared biscuit base and arrange them evenly all over.
  2. Pour the toffee over it and spread it evenly with the help of a butter knife.
  3. Put ½ cup of whipped cream over it and spread it evenly.
  4. Put the remaining ½ cup of bananas over it and spread it evenly.
  5. Put the remaining ½ cup of whipped cream and again spread it evenly using a butter knife.
  6. Place the cake tin on a plate and refrigerate for 45 minutes.
  7. Demould the pie and garnish with grated chocolate.
  8. Cut into 6 equal wedges and serve chilled.

Wow.. this is just beautiful.. just melts in the mouth.. with banana chunks.. in every bite.. and the toffee made from condensed milk.. its just superb.. And the cream on top just completes the desert..

You really have to hold yourself back from eating this whole pie at one go. Condensed milk with digestive biscuits makes a very rich pie. It's worth a million calories but i still wallop this. Rare exception i make for desserts.
