For the mixed vegetable stuffing
 

  1. Combine all the ingredients in a deep bowl and mash it well using a potato masher. Keep aside.


How to proceed
 

  1. Combine the whole wheat flour, urad dal flour, salt and approx. 1¼ cups of water in a deep bowl and mix well using a whisk. Cover it with a lid and keep aside to rest for 30 minutes.
  2. Heat a non-stick tava (griddle), sprinkle a little water on it and wipe it off gently using a muslin cloth.
  3. Pour a ladleful of the batter on it and spread it in a circular motion to make a 150 mm. (6”) diameter thin circle.
  4. Smear 1/2 tsp of oil over it and along the edges and cook on a medium flame till the dosa turns light brown in colour from both the sides.
  5. Put a little mixed vegetable stuffing on one side of the dosa and fold it over and make a semi-circle.
  6. Repeat steps 2 to 5 to make 5 more whole wheat dosa with mixed vegetable.
  7. Serve immediately with sambhar.
