Sometimes, when vrats coincide with festivals, there is a lot of work to do and there are lots of visitors too, so you cannot go on a total fast. You need something tasty to serve your guests and also to keep you energised.

Made of mashed potatoes and buckwheat flour with a dash of crushed peanuts for crunch and ingredients like green chillies and coriander for flavour, the Potatoes and Buckwheat Pakora is irresistibly tasty with an enticing mouth-feel too. It is sure to boost your energy levels and bring you back on track.

- Combine all the ingredients in a deep bowl and mix well.
- Add approx. 1 cup of water and mix well.
- Heat the oil in a deep non-stick pan, drop spoonful of the mixture using your fingers and deep-fry a few pakoras at a time on a medium flame till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
- Serve immediately with peanut chutney.
