Many people use tomatoes with the peel on for almost all dishes, just because it takes too much time to blanch them.
However, for some dishes, it is essential to cook and peel the tomatoes before chopping or blending them in order to get the right texture and intense flavour.
You do not need to compromise on this any more, because cooking tomatoes is a breeze in the Microwave oven. Minutes is all it takes to cook them, and so easily too!
- Make two light criss-cross slits on 2 large tomatoes and place them in a microwave-safe plate. Microwave on high for 2 minutes. Remove and peel it.
- When chopped it will yield 1 cup.
- When blended it will yield ¾ cup.
