Ingredients
1 pita bread (6”)
olive oil for brushing
3/4 cup cucumber cubes
3/4 cup tomato cubes (deseeded)
3/4 cup iceberg lettuce , torn into pieces
1/2 cup capsicum cubes
1/4 cup finely chopped parsley
1/4 cup finely chopped spring onion greens
1/4 cup chopped mint leaves (phudina)
1/4 cup thinly sliced spring onions whites

To Be Mixed Into A Dressing
2 tbsp olive oil
2 tbsp lemon juice
1 tbsp finely chopped garlic (lehsun)
salt and to taste

    Method
  1. Place a pita bread on a clean, dry surface and brush it with olive oil on both the sides.
  2. Heat a non-stick tava (griddle) and cook on a medium flame for 2 to 3 minutes or till it turns crisp and golden brown spots appear on both the sides.
  3. Cut the toasted pita bread into 25 mm. ×25 mm. (1”×1”) cubes.
  4. Combine all the ingredients, along with the dressing in a deep bowl and toss well.
  5. Serve immediately.

Recipe Tips for fattoush

  1. You can buy readymade pita bread or follow our recipe to make homemade pita bread.
  2. To toss the fattoush salad choose a large bowl. This will give you enough room to move the salad around while tossing it.

How to make Fattoush with step by step photos

  1. For the fattoush salad, first we will make the pita bread cubes. For this place a pita bread on a clean, dry surface and brush it with olive oil on both the sides.
  2. Heat a non-stick tava (griddle) and place the pita over it and cook on a medium flame till golden brown spots appear on the lower side.
  3. Turnover and cook on the other side till golden brown spots appear and while pressing it so that the pita bread turns crisp and golden brown spots appear.
  4. Place the crisp pita bread on a clean dry surface and cut the toasted pita bread into 25 mm. ×25 mm. (1”×1”) cubes. Keep aside.

Making the salad dressing for Fattoush

  1. In a bowl or small glass bottle, take olive oil in a bowl. Most salad dressings make use of extra virgin olive oil which is not only light and delicate, but also, healthy.
  2. Add lemon juice.
  3. Then add finely chopped garlic.
  4. Finally add salt and black pepper powder to taste.
  5. Combine all the ingredients and mix well. You can make use of a small whisk. Also, if you are using a small bottle, shut the lid and shake it well.

Tossing the Fattoush Salad

  1. In a deep bowl take the cucumber cubes. They provide a refreshing crunch to the salad.
  2. Add deseeded tomato cubes. You can even make use of cherry tomatoes to give a tangy flavour.
  3. Submerge the lettuce leaves in a bowl of cold water. Let them sit for 5–10 minutes and it will be as good as fresh lettuce. This is a secret tip to make the lettuce leaves crunchy and crispy. Roughly tear and add iceberg lettuce.
  4. Add capsicum cubes.
  5. Add finely chopped parsley.
  6. Add finely chopped spring onion greens.
  7. Add chopped mint leaves.
  8. Add sliced spring onion whites.
  9. Add the prepared salad dressing.
  10. Finally add the cut toasted pita bread pieces.
  11. Toss the salad and serve immediately.

This Lebanese salad is just amazing, the pita bread taste great in this recipe along with cucumber, tomatoes, lettuce and spring onions. The dressing has a good taste of olive oil and garlic along with lemon juice.

Fattoush is a Lebanese salad made up of vegetables and pieces of crunchy toasted pita bread. This is a nice colorful salad with cucumber, tomato., lettuce, radish and spring onions.

The concentration is more in the herbs which are the hero of this dish. Quite a unique recipe.
