Feel the soul of lebanon with this scrumptious wrap prepared with chickpea based hummus, parsley hinted falafel and sesame seeds based tahini. Adding jalapeno peppers and chilli flakes, makes this wrap really spicy too!

Ingredients

Method

For the felafel
 

  1. Combine all the ingredients and blend in a mixer to a coarse paste without using any water.
  2. Divide the mixture into 20 equal portions and shape each portion into a round ball.
  3. Heat the oil in a kadhai and deep-fry the felafels over a medium flame till they are golden brown in colour from all sides.
  4. Drain on absorbent paper and keep aside.

For the hummus
 

  1. Combine all the ingredients along with 2 to 3 tbsp of water and blend in a mixer till smooth. Keep aside.

For the tahini
 

  1. Heat a non-stick pan and dry roast the sesame seeds and chana dal separately. Keep aside to cool.
  2. Combine the sesame seeds and chana dal and blend in a mixer to a fine powder.
  3. Transfer the powder to a bowl, add all the remaining ingredients and mix well. Keep aside.

How to proceed
 

  1. Place a roti on a clean dry surface and spread ¼th of the hummus evenly over it.
  2. Place ½ cup of lettuce in a single row in the centre of the roti.
  3. Place 5 felafels over the lettuce and spread ¼th of the tahini over it.
  4. Arrange 1 tbsp of jalapeno rings and sprinkle ¼ tsp of chilli flakes over it and roll it up tightly.
  5. Repeat with the remaining ingredients to make 3 more rolls.
  6. Wrap a tissue paper around each roll and serve immediately.

For the felafel

 

    1. To make falafel recipe | Indian style falafel | Lebanese falafel | in a mixer jar, add 1 cup soaked kabuli chana (white chick peas). Chickpeas are the main ingredient in falafel. They provide the protein structure and texture that holds the falafel together.

    2. Add 1/4 cup finely chopped parsley. Parsley provides a fresh, herbaceous taste that complements the other spices used in falafel..

    3. Add 1/4 cup chopped coriander (dhania). Coriander adds a warm, slightly citrusy flavor that complements the earthy taste of chickpeas. It provides a depth of flavor that enhances the overall taste experience.

    4. Add 1/2 cup mint leaves (pudina). Mint has a strong, fresh and cooling flavour that can enhance the overall fragrance of the falafel.

    5. Add 8 to 10 garlic (lehsun) cloves. Garlic contributes to the aromatic profile of the falafel, making it more appealing to the senses.

    6. Add 1 tsp finely chopped green chillies. Green chili peppers add a spicy kick to the falafel recipe. Their heat can vary depending on the type of green chili used, so adjust the amount to your desired level of spiciness.

    7. Add 1/2 tsp roasted cumin seeds (jeera) powder. Cumin imparts a comforting warmth and depth to the falafel, making it more satisfying.

    8. Add salt to taste.

    9. Blend it to a coarse paste without using water.

    10. Remove the mixture in a deep bowl.

    11. Add 1 tbsp sesame seeds (til). Sesame seeds provide a satisfying nutty crunch when bitten into, enhancing the overall texture of the falafel.

    12. Mix it well. Divide and roll the mixture into 24 equal portions and shape them into small roundels.

    13. Heat oil in a deep pan, add a few falafels at a time.

    14. Deep fry them on a medium flame till golden brown in colour.

    15. Drain them on absorbent paper. Repeat step 5 to deep fry the remaining falafels.

For the hummus

 

    1. To make Hummus recipe | Lebanese dip | Indian style hummus | healthy hummus dip | in a mixer jar, take 1 cup soaked and boiled kabuli chana (white chick peas).

    2. Add oil.

    3. Add 2 tsp chopped garlic (lehsun) and salt to taste.

    4. Add 2 tsp lemon juice.

    5. Add 4 tbsp fresh curd (dahi).

    6. Blend to a smooth mixture.

    7. Spoon the mixture into a serving bowl.

    8. Drizzle olive oil over the hummus. No hummus is complete without the olive oil drizzled on top.

    9. Also sprinkle a little chili powder over it. This is to give it a slight kick of spice to Hummus.

    10. Now sprinkle finely chopped parsley over the hummus.
