  1. Heat the olive oil in a broad non-stick pan, add the onions and garlic and sauté on a medium flame for 2 minutes.
  2. Add the zucchini and sauté on medium flame for 5 minutes.
  3. Add the tomatoes, basil, salt and pepper and sauté on medium flame for 30 seconds.
  4. Switch off the flame, add the cheese and toss it gently.
  5. Serve immediately.
