Juicy baby corn improves the texture of this colourful stir-fry while capsicum adds more spice and aroma to it. Enjoy the Stir-Fry Paneer, Broccoli and Baby Corn with your main course , or as a peppy snack in its own right!

Ingredients
Main Ingredients
3/4 cup paneer (cottage cheese) cubes
1 cup blanched broccoli florets
1/2 cup diagonally cut and blanched baby corn
2 tsp oil
1/2 cup sliced capsicum
1 tbsp red chilli sauce
1 tbsp roasted sesame seeds (til)
2 tbsp roasted and coarsely crushed peanuts
salt and to taste
Method
- Heat the oil in a broad non-stick pan add the capsicum and sauté on a high flame for 1 to 2 minutes.
- Add the broccoli, baby corn and sauté on a high flame for 1 minute.
- Add the paneer, chilli sauce, sesame seeds, peanuts and salt, toss gently and cook on a high flame for 2 minutes.
- Serve immediately.
