Russian salad sandwich is a cold sandwich that is perfect for hot summer afternoons. The chopped pineapple contrasts well with the remaining ingredients, and adds a crispy, tangy feel to the sandwich. Use freshly-crushed pepper for best flavour and aroma.

For The Russian Salad
3/4 cup chopped and boiled mixed vegetables (carrot , green peas and french beans)
1/2 cup mayonnaise
2 tbsp fresh cream
1/4 cup chopped canned pineapple
1/4 cup boiled , peeled and chopped potatoes
salt and freshly ground black pepper (kalimirch) to taste

Other Ingredients
8 bread slices
butter for spreading

For Serving
tomato ketchup
potato wafers


For the russian salad

  1. Combine all the ingredients in a deep bowl and mix well.
  2. Divide it into 4 equal portions and keep aside.

How to proceed

  1. Place 2 bread slices on a clean, dry surface and apply a little butter on each bread slice.
  2. Place 1 portion of the prepared russian salad in the centre of 1 buttered bread slice and spread it evenly.
  3. Sandwich it using another bread slice with the buttered side facing downwards.
  4. Cut the sandwich diagonally into 2 equal pieces.
  5. Repeat steps 1 to 4 to make 3 more sandwiches.
  6. Serve immediately with tomato ketchup and potato wafers.
