A melt-in-the-mouth sweet made by deep-frying a batter of boiled and sweetened pumpkin flavoured with cardamom. Whole wheat flour helps hold the batter together while coconut and poppy seeds intensify the taste and texture of the Gulgule.
Mash the boiled pumpkin while it is hot, and also add the jaggery immediately so the warmth will help it melt faster.
