Paneer is a fresh, unaged , soft cheese that is white in colour. It has no specific flavor and hence can be transformed into a wide range of recipes across all courses from starters to dessert. Paneer can be made at home by boiling cow’s milk and curdling it with acidic ingredient like lemon juice or vinegar. This coagulated milk is drained using a muslin or cheese cloth. The separated whey water can be discarded or used in various preparations. This coagulated milk is called chenna and used in preparation of Bengali sweets like Sandesh, Chum Chum. Chenna is then pressed to form a block of cottage cheese (paneer).

• Paneer is readily available in grocery stores and supermarkets in small and large packets. Check the expiry date before buying.
• It is also available in local dairy shops, where it is made every day. Check for maximum softness and freshness.
• When buying paneer ensure that it is completely white in colour and doesnt have any greenish or yellowish spots.
How to Store Paneer (using cows milk), gay ka paneer
• Store paneer in enough water in a container. The water has to be changed every day, after which it can be refrigerated again.
• If the paneer has turned sour or lost its softness, then place it in warm water for about 10 minutes and then use it.

1. Being a good source of protein, it’s a great addition to a weight watcher’s diet to boost weight loss.
2. Compared to paneer made from buffalo’s milk, it is low in calories.
3. If you are looking to build strong bones and teeth, do add this paneer to your diet at least twice a week.
4. It helps maintain blood glucose levels too, as it is very low in carb content. But have it in restricted quantities in a meal. Do not go overboard in its serving size.
5. Moreover it’s easier to digest too.
100 grams of paneer cubes (made using cow’s milk) is approx. ¾th cup has 265 calories, 18.3 g of protein, 1.2 g of carbohydrate, 20.8 g of fat, 110 mcg of vitamin A, 208 mg of calcium and 138 mg of phosphorus.
