Thinly-sliced lotus stems are stir-fried with flavourful sauces, spices and honey to get a sweet and sour delicacy that tickles your taste buds. Make sure you serve this Oriental starter immediately on preparation, before it gets chewy.

3 cups peeled and thinly sliced lotus stem
5 tbsp cornflour
oil for deep-frying
1 tbsp chilli oil
3 tbsp honey
2 1/2 tsp dry red chilli flakes (paprika)
3 tbsp tomato ketchup
1 tsp soy sauce
salt to taste

For The Garnish
2 tbsp finely chopped spring onion whites and greens
  1. Combine the lotus stem and cornflour in a deep bowl and toss well.
  2. Heat the oil in a deep non-stick pan and deep-fry the lotus stems in 2 batches till they turn golden brown and crispy from all the sides. Drain on an absorbent paper and keep aside.
  3. Heat the chilli oil in a broad non-stick pan add the honey, chilli flakes, tomato ketchup, soy sauce and salt, mix well and cook on a medium flame for 1 minute.
  4. Add the fried lotus stems, toss well and cook on a medium flame for 1 minute.
  5. Serve immediately garnished with spring onion whites and greens.

Wow.. this recipe is just superb.. it so crunchy.. and coated with sweet and spicy sauce.. i have never tried lotus stem.. but this recipe is really very very tasty.. I have loved this recipe.. will definitely make this for my guest and serve them as starter..
