CHOOSING THE CRISPIEST ASPARAGUS
sparagus is a sure sign of the arrival of Spring. When you select asparagus, select bright green ones with closed, firm tips. The size of the greens and stalks should be almost equal. Also, select stalks of almost equal thickness so that they cook equally. Avoid wilted tips, but if you do end up with some wash them in cold water to perk them up. However, always avoid soggy or mouldy tips.
