Once cooled, toss it into a large mixing bowl with finely chopped onions, boiled potatoes, and juicy tomatoes. For that signature crunch, add a generous handful of nylon sev, crushed papdis, and roasted peanuts or masala chana dal. The secret to the authentic taste is the trio of Indian chutneys: the sweet and sour khajur imli ki chutney, the spicy green chutney made with mint and coriander, and a pungent garlic chutney for an extra kick.

 

Assembling this Bhel Puri Chaat is a quick process, but timing is everything! To prevent the puffed rice from getting soggy, mix the dry ingredients with the chutneys, lemon juice, and chaat masala just before serving. It is difficult to make the chutneys and dry masala powder in very small quantities, so you can make a little more as shown here and store the remaining quantities in dry airtight containers in the fridge to use later. Keep the ingredients ready beforehand, but assemble this quick and easy snack just before serving to enjoy the tempestuous blast of fresh flavours and textures.
