Bright and colourful veggies ranging from purple cabbage to carrot and capsicum give you a variety of flavours and textures, while a tangy dressing adds to the taste.
Apple is blended with the dressing to balance the flavour and to give it a luscious mouth-feel. Raw vegetables help to alkalize the body and are less likely to ferment in the gut, thus helping to reduce the chances of acidity. Do not make this dressing in advance as it will decolorize.
