Cucumber is a vegetable with a high water content and is therefore relatively low in calories and carbohydrates. Try having cucumber with its peel which itself is a great source of fibre and many more nutrients. The fat free lemon juice and soya sauce dressing enhances this salad, especially when it is served chilled.

Ingredients
1 cup tomato cubes
1 cup cucumber cubes
1/2 cup sliced spring onions (whites and green)

To Be Mixed Into A Dressing
1/2 tsp finely chopped green chillies
1 tsp finely chopped garlic (lehsun)
1 tsp soy sauce
1/2 tbsp lemon juice
salt to taste

    Method
  1. Combine all the ingredients for the salad and add the dressing and toss well.
  2. Serve immediately.

Tips
  1. You can make large quantities of this dressing and refrigerate it till required.
  2. I often blend all the ingredients in a blender or grind them in a "silbatta" so that all the ingredients marry well.

i made this recipe as it looked and sounded very interesting... and i love soya sauce... so i decided to make it... however i added brown sugar instead of the sugar substitute as i didn't have any...also i added a few drops of sesame oil just to give it that nutty Asian flavor... and trust me on this... the taste was divine... Happy cooking...

Cucumber, tomatoes and spring onions mixed with a mildly spiced soya dressing. Healthy and made with zero oil.
