A very unique khichdi prepared with crushed sweet corn kernels, perked up with a tempering of seeds and green chillies.
A dash of asafoetida boosts the aroma of this easy-to-cook khichdi, while lemon juice adds a welcome tang to it.
The Makai ni Khichdi is ideal to cook in the Microwave because corn cooks very fast!
- Combine the oil, mustard seeds, cumin seeds, asafoetida and green chillies in a microwave-safe bowl, mix well and microwave on high for 1 minute.
- 2. Add the corn, sugar, salt and 1 cup of water, mix well and microwave on high for 5 minutes.
- 3. Add the lemon juice and mix well.
- Serve hot garnished with the coriander.
