Cabbage rice is just the thing to make when you get back home late and wish for a quick-fix but filling dinner!
sliced capsicum and a very mild dose of pepper are the only flavouring agents in this gentle rice and cabbage preparation. A sprinkling of cheese ensures that the meal is satisfying too.

Ingredients
Main Ingredients
1 1/2 cups shredded cabbage
2 1/4 cups soaked and cooked long grain rice (Basmati chawal)
2 tbsp butter
1/2 cup finely chopped onion
1/4 cup thinly sliced capsicum
1/2 tsp freshly ground black peppercorns (kalimirch)
salt to taste
For The Garnish
2 tbsp grated processed cheese
Method
- Heat the butter in a broad non-stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes.
- Add the cabbage and capsicum and sauté on a medium flame for 2 to 3 minutes.
- Add the rice, pepper powder and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Serve hot garnished with cheese.

Nice, easy to make and flavorful for a quick dinner last night. Substituted the capsicum with baby beans as I didn''t have capsicum, still came out tasty!
