To make veg mayo grilled sandwich, in a broad non-stick pan, heat butter, add onions, potatoes, coloured capsicum, grated carrot, boiled corn, black pepper, chilli flakes, oregano and salt and sauté on a medium flame for 2 minutes. Transfer into a deep bowl, add grated cheese and mayonnaise and mix well. Divide the stuffing into 8 equal portions. Take 2 bread slices and place them on a clean, dry surface and apply 1 tsp butter and 1 tsp green chutney on each slice of the bread. Put a portion of the stuffing on one slice and cover it with the slice with the buttered-chutney side facing downwards and press it lightly. Heat a grill toaster, grease the grill toaster using 1 tbsp butter and place the sandwich in the grill toaster and cook on a medium flame, till it turns brown and crisp from both the sides. Remove and cut into half using sharp knife. Serve immediately with tomato ketchup and French fries.
