To make til masala khakhra, combine the whole wheat flour, sesame seeds, turmeric powder, chilli powder, oil and salt in a deep bowl and knead into a soft dough using enough warm water. Divide the dough into 6 equal portions. Roll out a portion into a 150 mm. (6") diameter thin circle using a little whole wheat flour for rolling. Heat a non-stick tava (griddle) and place a roti on it and cook on both sides for a few seconds and cook on a slow flame until crisp using little pressure with help of a muslin cloth or with a khakhra press. Repeat steps 3 to 5 to make 5 more khakhras. Allow them to cool completely, store in an air-tight container. Use as required.

The small quantity of sesame seeds lends some iron as well. This key nutrient is required to ensure fatigue doesn’t set in. If you wish you can increase the quantity of til in spicy sesame wheat khakhra to 1 tbsp.

dough for til masala khakhra

  1. In a bowl put 1/2 cup whole wheat flour (gehun ka atta).
  2. Add 1 tsp sesame seeds (til).
  3. Add 1/4 tsp turmeric powder (haldi).
  4. Add 1/2 tsp chilli powder.
  5. Add 2 tsp oil.
  6. Add salt to taste. We added 1/4 tsp salt.
  7. Add enough water to make a soft dough. We added 3 tbls water. You will need very little water.
  8. Knead into a soft dough.

  1. Divide the dough into 6 equal portions.
  2. Sprinkle a little whole wheat flour (gehun ka atta)  on the rolling surface. Flatten the dough between your palms and place on rolling board and top with flour. 
  3. As you roll the dough, you will need to rotate it and sprinkle whole wheat flour on it.
  4. Roll out a portion of the dough into a 150 mm. (6") diameter thin circle using a little whole wheat flour for rolling. Roll out as thinly as possible.
  5. Heat a non-stick tava (griddle) and grease it with oil or ghee. 
  6. Place the rolled out Khakhra dough on it. 
  7. Cook on one side for 30 to 45 seconds or until bubbles (blisters) appear. Cook on slow flame. High flame will burn the khakhra. 
  8. Grease with  ¼ tsp of oil or ghee.
  9. Flip and cook the Khakhra on the other side. Cook on slow flame to get a crisp khakhra.
  10. With the help of a khakhra press or  folded muslin cloth, press the khakhra from all the sides and cook over a slow flame till it is crisp. 
  11. Remember to cook the edges of the khakhra by applying pressure with the khakhra press. It takes a total time of about 3 minutes to cook one khakhra. 
  12. You will have to keep cooking the khakhra and flipping it till done.
  13. Your khakhra for weight loss | is ready. 
  14. Serve khakhra for weight loss | as a healthy snack.
