Strawberry Biscuit Pudding is a delightful eggless Marie biscuit pudding that requires no cooking, no baking, and uses ingredients that are easily available in India. This dessert combines the creaminess of whipped cream, the freshness of strawberries, and the crunch of Marie biscuits to create a layered treat perfect for parties, celebrations, or quick family desserts. The use of strawberry crush adds a sweet-tart burst of flavour, making every bite refreshing and indulgent. Its simplicity and visual appeal make it a favourite among both kids and adults.
The base of this easy strawberry biscuit cake is made by layering broken Marie biscuits in a deep dish. These biscuits soften beautifully when combined with cream, giving the pudding a cake-like texture without the need for baking. Marie biscuits are light, inexpensive, and commonly found in Indian homes, making this dessert both budget-friendly and convenient. Their neutral flavour allows the strawberry and cream layers to shine through, creating a perfectly balanced dessert.
The luscious layer of beaten whipped cream adds smoothness and richness to the pudding. When spread evenly over the biscuits, it lends a creamy texture that ties the dessert together. Whipped cream is now widely available in Indian supermarkets, and you can also prepare it at home using whipping cream or non-dairy whipping premixes. The trick is to ensure the cream is chilled and beaten until soft, airy peaks form, so the pudding stays light and fluffy.
Fresh strawberries, sliced and arranged beautifully, bring brightness and freshness to the dessert. Strawberries are now commonly available in India during the winter months, especially in Maharashtra, Karnataka, and Himachal Pradesh. Their natural sweetness and slight tang elevate the flavour, while the vibrant red colour makes the pudding look visually stunning. If strawberries are not in season, you can substitute them with fruits like kiwi, mango, or banana.
The addition of strawberry crush enhances the fruity flavour and adds moisture to the layers. Easily available in Indian grocery stores, crush acts as a flavour booster, ensuring every spoonful is packed with taste. Once the layers are repeated and assembled, the pudding is refrigerated for at least 1 hour. This resting time allows the biscuits to soften and the flavours to meld, giving the dessert its characteristic cake-like consistency.
To make your strawberry biscuit pudding even better, keep a few tips in mind: use well-chilled whipped cream for best texture; refrigerate longer (2–3 hours) for firmer pudding; add toasted nuts like almonds or pistachios for crunch; or drizzle chocolate sauce for variation. You can also soak the biscuits lightly in milk for an even softer texture, but avoid over-soaking to prevent sogginess. With these simple tips, you can create a dessert that is quick, elegant, and irresistibly delicious.
