Ingredients
Main Ingredients
1 cup cooked Arborio rice
1/2 cup grated processed cheese
1/2 cup plain flour (maida)
1/4 cup finely chopped capsicum (red , yellow and green)
1 1/2 tsp dry red chilli flakes (paprika)
2 tbsp finely chopped basil
salt to taste
bread crumbs for rolling
oil for deep-frying
For Serving
Method
- Combine the plain flour and ¾ cup of water in a bowl and mix well into a thick batter till no lumps remain. Keep aside.
- Combine the rice, cheese, capsicum, chilli flakes, basil and salt in a deep bowl and mix well.
- Divide the mixture into 12 equal portions and shape each portion into a round ball.
- Dip each ball into the plain flour-water mixture and roll them in the bread crumbs till they are evenly covered from all the sides. Refrigerate for 15 to 20 minutes.
- Heat the oil in a deep non-stick kadhai and deep-fry the balls, a few at a time, till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
- Serve immediately with pizza sauce.

I had tried Risotto rice many times, but risotto balls is something different. These balls serves a great taste of herbs, cheese and basil..

Tasted ok. Definitely need to be eaten immediately for best taste. Used about 1 cup or more for bread crumbs. Roll generously.
