Mushroom Cheese and Spring Onions Panini | grilled mushroom cheese sandwich |  Indian style grilled sandwich made from hot dog rolls |

Mushroom Cheese and Spring Onions Panini is a rich, creamy, and flavorful grilled sandwich that combines the earthy taste of mushrooms with the gooey goodness of cheese and the freshness of spring onions. Made using hot dog rolls instead of traditional panini bread, this Indian-style grilled sandwich is both innovative and comforting. The combination of buttery mushroom filling, cheese spread, and spring onion greens creates a perfect balance of taste and texture — crispy on the outside, soft and cheesy on the inside. Ideal for breakfast, brunch, or an evening snack, this panini is sure to be a hit with both kids and adults alike.

The heart of this dish lies in its mushroom filling, which is creamy, mildly spiced, and irresistibly aromatic. The filling is prepared by sautéing green chillies, onions, and capsicum in butter, which adds a wonderful depth of flavor. The addition of plain flour and milk helps create a light, creamy sauce that coats the mushrooms beautifully without being too heavy. The sliced mushrooms (khumbh) bring a savory, umami flavor, while the capsicum adds a mild crunch and freshness. Seasoned lightly with salt, the mixture becomes the perfect stuffing — rich, smooth, and satisfying.

Once the filling is ready, assembling the Mushroom Cheese Panini is quick and simple. Each hot dog roll is slit horizontally and spread generously with cheese spread, giving the sandwich a luscious, cheesy base. A layer of the prepared mushroom filling is added to the lower half of the roll, topped with a sprinkle of finely chopped spring onion greens for a burst of color and mild sharpness. The roll is then closed, brushed with butter, and grilled until golden brown and crisp from both sides. The result is a sandwich that’s crunchy outside, soft inside, and oozing with creamy mushroom goodness.

The grilled mushroom cheese sandwich offers a wonderful mix of flavors and textures. The mushrooms and cheesecreate a melt-in-your-mouth creaminess, while the spring onions provide a gentle freshness that balances the richness. The use of hot dog rolls instead of traditional sandwich bread gives a soft yet sturdy texture, ensuring that the filling stays intact while grilling. A slight spice from the green chillies adds a subtle Indian touch, making this sandwich not only delicious but also uniquely local in flavor — a perfect example of an Indian-style panini.

From a nutritional standpoint, this sandwich provides a good balance of protein, calcium, and fiber. Mushrooms are low in calories and rich in vitamin D, selenium, and antioxidants, which support immunity and energy metabolism. The cheese spread and milk contribute calcium and protein, while the spring onions and capsicum add vitamin C and dietary fiber. Using minimal butter makes this panini lighter while still maintaining its indulgent flavor. For a healthier twist, you can opt for whole wheat rolls or multigrain bread and use low-fat cheese without compromising on taste.

In conclusion, the Mushroom Cheese and Spring Onions Panini is a creamy, indulgent, and easy-to-make Indian-style grilled sandwich that delivers comfort and flavor in every bite. Perfect for any time of the day, it pairs beautifully with a hot cup of tea, coffee, or even soup. The combination of cheese, mushrooms, and fresh greens creates a harmonious blend that is both satisfying and wholesome. Whether served at a casual brunch, kids’ tiffin, or an evening snack, this panini is sure to win hearts with its irresistible aroma, cheesy filling, and golden crispy texture..
