Method

for Baingan Grilled hot dog rolls Sandwich 

  1. Heat 2 tsp of olive oil on a non-stick tava (griddle), place the brinjal slices on it and cook on a medium flame for 5 minutes using the remaining 2 tsp of olive oil till it turns light brown in colour from both the sides.
  2. Cool slightly and cut them into halves using a sharp knife. Keep aside.
  3. Slit a hot dog roll horizontally using a sharp knife and apply 1 tsp of butter on each bread halve.
  4. Put 4 brinjal halves on the lower halve, sprinkle 1/8 tsp of sea salt and ¼ tsp of chilli flakes and evenly over it.
  5. Finally put 1 tbsp of cheese evenly over it.
  6. Close the bread roll and brush ½ tsp of butter on top of the bread and grill in a greased pre-heated sandwich griller for 5 minutes or till they turn crispy and brown from both the sides.
  7. Repeat steps 3 to 5 to make 3 more paninis.
  8. Cut each panini diagonally into 2 equal pieces.
  9. Serve Baingan Grilled hot dog rolls Sandwich  immediately.

How to make Eggplant and Mozzarella Panini

 

    1. To make the Eggplant and Mozzarella Panini, wash and place the brinjal (baingan / eggplant) slices on a chopping board.

    2. Trim both the edges of the brinjal.

    3. Cut the brinjal into medium sized slices.

    4. Heat 2 tsp of olive oil on a non-stick tava (griddle).

    5. Place the brinjal (baingan / eggplant) slices on it and cook on a medium flame for 5 minutes using the remaining 2 tsp of olive oil till it turns light brown in colour from both the sides.

    6. Cool slightly and cut them into halves using a sharp knife. Keep aside.

    14. Grill in a greased pre-heated sandwich griller for 5 minutes or till they turn crispy and brown from both the sides.

    15. Cut each panini diagonally into 2 equal pieces. Repeat steps 3 to 5 to make 3 more paninis.

    16. Serve Eggplant and Mozzarella Panini immediately.

When i saw this recipe I was wondering how will a panini with eggplant taste and I had eggplant at home so I decide to make it and it was surprisingly very very good.
