What is dark chocolate?

This is what dark chocolate looks like. Dark Chocolate is made by processing a mixture of cocoa, fat-like cocoa butter and sugar. It has more of cocoa, with little or no milk, which is what gives it a dark colour and intense flavour. The percentage of cocoa in these chocolate slabs ranges from 70% to 99%. For home use, it is reasonable to buy 70% dark chocolate. You can use semi sweet chocolate provided it does have cocoa butter mentioned in the ingredients. The cocoa butter is what melts when dark chocolate is heated. 
  2. Chop it into uniform pieces so that we can melt it. Mare sure you don't have very big pieces.

  1. Put the 1/2 cup chopped dark chocolates in a microwave safe bowl. 
  2. Microwave at 180 wats for 40 seconds. Then check to see if your dark chocolate will melt easily by using a spoon pushing downwards. We microwaved for another 10 seconds for a total of 50 seconds.
  3. Remove dark chocolate from the microwave.
  4. Use a spoon to mix the melted chocolate. Just a little mixing and the chocolate melts easily.
  5. Cool the dark chocolate slightly.
  6. Pour it in a piping bag and make a small hole at the tip using a scissor.
  7. Taking a baking aluminium tray.
  8. Cover the tray with parchment paper as we will be piping dark chocolate on it.
  9. Now, pipe out small chocolate droplets over it at regular intervals, till all the chocolate is over.
  10. Once piped put the chocolate in the fridge for 60 minutes.
  11. Scrape it carefully using a butter knife. The dark chocolate should come off easily. Put in a plastic box. 
  12. Use immediately or store in the freezer for 30 days.
