Considering that the paste is so easy to make at home, we suggest you make a small batch and keep it handy in the fridge at all times. It stays fresh for a week when stored in the refrigerator. You can also store green chilli paste made at home in a deep freezer for 2 months. Remember not to use a glass jar while storing in a deep freezer.

You can use this Indian green chilli paste in almost every dish you cook – right from rotis to pulaos and even a variety of snacks and sabzis. Try recipes like matar poha, malai kofta, cheese onion and green pea pulao and palak paratha.

Tips for green chilli paste. 1. Make sure you use dark green chillies, not light, because it is these dark chillies that give the intense flavour. Light green chillies are less spicy. 2. Do not miss out on adding salt, as it acts as a preservative and also maintains the green colour of the green chilli paste. 3. If you wish you can add 1 tsp oil while blending. This will add smoothness to the paste and also act as an additional preservative.

Preparing the green chillies

  1. This is what green chillies look like.
  2. Cut the stems of the green chillies and discard them.
  3. Put the green chillies in a deep glass bowl of water.
  4. Remove the dirt of  the green chillies with a spoon as you want to avoid using your fingers.
  5. Drain the green chillies in a sieve.
  6. Cut each green chilli into 3 pieces as we are going to blend it.

Making the green chilli paste

  1. Salt acts as a preservative. It increases the shelf life of the paste. If you do not add salt, the green chilli paste might change the colour to dark green or blackish green on storing. 
  2. Blend for 10 to 15 seconds. Note that no water is used for green chilli paste for cooking.
  3. Use a spoon to bring the paste into the centre for better grinding.
  4. Grind again for the second time for 15 seconds. 
  5. Again use a spoon and bring the paste to the centre of the mixer. We have suggested mixing and grinding at intervals to get a uniform paste.
  6. Grind again for 10 seconds. This is the third grinding.
  7. Again use the spoon to bring the paste to the centre. We can see we need one last pulse to finish the paste.
  8. We grind the fourth time for 10 seconds and our coarse Indian green chilli paste is ready. If you wish you can grind it to a fine paste.
  9. To store green chilli paste at home, put it in an airtight container and freeze or put in a glass jar in the refrigerator. In the refrigerator the paste stays fresh for upto a week. Freezing will keep the shelf life of the paste to about 2 months.

I ask this qs for all three: green paste, green chilli paste and ginger-green chilli paste: Is there anyway to protect the rich green color? I often find that chutneys etc, develop a band of drakness at the endges. Do help. (Like, will adding a dash of lemon help?)

Tarla Dalal    Yes lemon juice definitely helps to maintain the green colour of chutney. So does salt also help. Even if you make ginger-green chilli paste, ensure to add little salt. When made fresh, for a few hours they maintain green colour. However any of these when stored in refrigerator for longer time will change the colour slightly.
