Ingredients

For The Spinach Gravy
1 tsp butter
1/4 cup finely chopped onions
1 tsp finely chopped green chillies
3/4 cup spinach (palak) purée , refer handy tip
salt and freshly ground black pepper (kalimirch) to taste

To Be Mixed Into A Vegetable Mixture
1/4 cup chopped and boiled french beans
1/4 cup chopped and boiled carrots
1/4 cup boiled green peas
1/4 cup boiled cauliflower florets
1 cup white sauce

Other Ingredients
2 tbsp grated mozzarella cheese
Method

For the spinach gravy

  1. Heat the butter in a deep non-stick pan, add the onions and sauté on a medium flame for 1 minute.
  2. Add the spinach purée, green chillies, salt and pepper, mix well and cook on a medium flame for1 more minute, while stirring occasionally. Keep aside.

How to proceed

  1. In a greased baking dish, put the prepared vegetable mixture and spread it evenly at the bottom.
  2. Pour the prepared spinach gravy over it and spread it evenly.
  3. Sprinkle the cheese evenly over it and bake in a pre-heated oven at 200ºc (400ºf) for 10 to 12 minutes.
  4. Serve immediately.

  1. 3 cups chopped spinach when blanched and puréed gives approx. ¾ cup spinach purée

A wonderful bakedish.. Mixed vegetable in white sauce along with the spinach gravy over it makes a wonderful combination. The creamy white sauce and spinach gravy with onions have their unique taste and texture. However when baked with cheese on top, they blend really well. No so spicy yet not bland. Just perfect!
