One can easily find vendors serving a variety of chaat on every corner of the street in India. Their menu generally includes aloo tikki chaat, aloo chaat, pani puri, bhelpuri, papdi chaat, dahi vada and various other things. The aloo tikkis used in the dish are deep fried and if you wish you can even shallow fry it! You can also add boiled and mashed green peas or crushed paneer to the tikkis!

- Combine all the ingredients in a deep bowl and mix well.
- Divide the mixture into 8 equal portions.
- Roll and shape each portion into a 63 mm. (2½”) round flat tikki.
- Heat the oil in a broad non-stick pan and deep- fry 4 tikkis at a time, till they turn golden brown in colour from all the sides. Drain on an absorbent paper and keep aside.
- Combine the curds and sugar in a deep bowl, mix well using a whisk. Keep aside.
- Just before serving, place 2 aloo tikkis on a serving plate.
- Spread ¼ cup of curd-sugar mixture, 2 tsp of khajur imli ki chutney, and 2 tsp of green chutney evenly over it.
- Sprinkle ¼ tsp of cumin seeds powder, ? tsp of chaat masala and ? of black salt evenly over it.
- Finally sprinkle 1 tbsp of nylon sev, 1 tsp of coriander and 1 tbsp of pomegranate evenly over it.
- Repeat steps 2 to 5 to make 3 more plates of aloo tikki chaat.
- Serve the aloo tikki chaat immediately.

Mix well using a whisk and keep aside. Aloo tikki chaat tastes better with chilled yogurt so, refrigerate it for a while before adding.
For making the aloo tikki chaat recipe | Delhi style aloo tikki chaat | street style aloo tikki chaat | wash, cook, peel and mashed potatoes in a bowl, using a masher. Just ensure there is no big chunk of potato left or else the Tikki won’t bind and break while frying.
Add finely chopped coriander. Make use of fresh leafy greens to get the best flavors.
Add green chilies.
Add 2 tbsp of cornflour for binding all the ingredients. Use an equal quantity of breadcrumbs or arrowroot flour if corn flour is not available. For a street-style mouthfeel make use of cornflour as it gives the Tikki a crispy outer layer.
Add salt to taste.
Combine all the ingredients and mix well.
Divide the mixture into 8 equal portions. Sometimes the tikkis are also stuffed with green peas, paneer, spicy lentil mix or nuts etc. In this recipe, we have not stuffed the tikkis and kept them simple.
To cook aloo tikki | Delhi style aloo tikki | street style aloo tikki | roll and shape a portion into a 63 mm. (2½”) round flat tikki. You can shape into any desired form just make sure they do not have any cracks.
Similarly, roll out all the aloo tikkis and keep aside.
Heat the oil in a broad non-stick pan and deep-fry 4 tikkis at a time. For a healthier alternative, shallow-fry the aloo Tikki in a broad non-stick pan or cook them on a flat tava.
Cook till they turn golden brown in color from all the sides.
Drain the aloo tikkis an absorbent paper.
Similarly, deep-fry all the aloo tikkis and keep them aside.
Just before serving, place 2 aloo tikkis on a serving plate.
Spread ¼ cup of curd-sugar mixture.
Drizzle 2 tsp of khajur imli ki chutney.
Also, drizzle 2 tsp of green chutney evenly over it. The quantity of all the chutneys have to be adjusted as per your preference.
Sprinkle ¼ tsp of cumin seeds powder.
Sprinkle chaat masala.
Furthermore, sprinkle black salt evenly over it.
Finally sprinkle 1 tbsp of nylon sev. For an added crunch, you can sprinkle broken papdis, masala peanuts or fried chana dal over the aloo tikki chaat.
Sprinkle 1 tsp of coriander.
And 1 tbsp of pomegranate evenly over it. For an added crunch, you can even sprinkle finely chopped onions and tomatoes.
Repeat steps 1 to 10 to make 3 more plates of Delhi style aloo tikki.
