Ingredients

For The Vegetables and Spaghetti Mixture
3/4 cup boiled and chopped mixed vegetables (french beans , carrots and green peas)
1/4 cup finely chopped onions
1/4 cup finely chopped capsicum
3/4 cup boiled sweet corn kernels (makai ke dane)
1 1/2 cups cooked spaghetti
1 tbsp olive oil
1 tsp chilli powder
salt to taste

For The Tomato Sauce
2 cups roughly chopped tomatoes
2 tbsp fresh cream
1/2 tsp chilli powder
1 tbsp sugar
salt to taste

Other Ingredients
1 cup white sauce
1/4 cup grated processed cheese
Method
For the vegetables and spaghetti mixture

  1. Heat the olive oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
  2. Add the capsicum and sauté on a medium flame for another 1 minute.
  3. Add the mixed vegetables, sweet corn, spaghetti, chilli powder and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.

For the tomato sauce

  1. Combine the tomatoes and 1 tbsp of water in a deep non-stick pan, cover with a lid and cook on a medium flame for 5 minutes or till the tomatoes are soft.
  2. Allow them to cool slightly and blend in a mixer to a smooth pulp.
  3. Strain the tomato pulp using a strainer.
  4. Transfer the tomato pulp into a deep non-stick pan, add the fresh cream, chilli powder, sugar and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside.

How to proceed

  1. Combine the vegetable and spaghetti mixture and tomato sauce in a broad non-stick pan, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  2. Pour this mixture into a baking dish and pour the white sauce evenly over it.
  3. Finally sprinkle the cheese evenly over it and bake in a pre-heated oven at 200°c (400°f) for 10 minutes.
  4. Serve immediately.
