All you need to do is cook the eggplant slices on a grill pan and drizzle it with oil and sprinkle a little salt, and voila, you have a healthy and irresistibly tasty treat on your table.

- Heat a grill pan with 2 tsp of olive oil and arrange 8 slices on it and cook on a medium flame for 4 to 5 minutes or till it becomes light brown in colour from both the sides.
- Transfer them on a serving plate and drizzle the remaining 1 tsp of olive oil and sea salt evenly over all the grilled brinjal slices.
- Serve immediately.
