12 small potato (with the skin)
5 tbsp grated fresh coconut
3 tbsp chopped coriander (dhania)

2 tsp sugar
1 1/2 tsp chilli powder
a pinch of asafoetida (hing)
salt to taste
1/2 tsp oil
Method
- Wash the potatoes and make criss-cross slits on each potato taking care not to separate the segments.
- Transfer the potatoes to a microwave safe bowl and microwave on high for 5 minutes or till done. Keep aside.
- Combine all the remaining ingredients in a bowl and mix well to make a mixture.
- Stuff the potatoes evenly with the mixture.
- Arrange them in a shallow microwave safe dish and sprinkle a little oil and 1½ tbsp of water over it and microwave on high for 5 minutes.
- Serve immediately.

for making this the criss cross slits have to be very deep in order to add the mixture inside the potatoes. its quick and very easy to make
