Here is a cheesy, garlicky dressing, which is ideal to make a pungent, creamy and chunky salad. While ingredients like mustard paste, cheese and olive oil, give the Roasted Garlic Dressing a luscious mouth-feel, garlic, vinegar and pepper give it a zesty and kind of overpowering flavour, which is ideal to perk up a salad with modest veggies.


The garlic is roasted in an oven, wrapped in aluminium foil. This helps to boost its flavour, so follow the same procedure when making this dressing.

Method

  1. Cut the head of the garlic and discard it. Place the garlic on an aluminium foil, drizzle ½ tsp of olive oil evenly over it.
  2. Wrap it well from all the sides and roast in a pre-heated oven at 200ºc (400ºf) for 25 minutes.
  3. Remove the garlic from the foil and peel it.
  4. Combine all the ingredients along with the roasted and peeled garlic in a mixer and blend till smooth.
  5. Use as required.
